What is Oolong Tea?

Oolong Tea is a semi-fermented product where the manufacturing process is similar to that employed for green tea, except that the leaf is slightly withered and a light fermentation allowed before it is dried.

A similar semi-fermented type is Jasmine tea, prepared by spreading jasmine flowers over the dried leaf, which absorbs their fragrance, and then sifting out the dried flowers.
